I've actually play tested a lot of these... so I can comment on some ones I've tried.

Relatively easy to sight read and play
"Field (Day)" by Latios212 - for obvious reasons :P
"Goron City (Day)" by Olimar12345 - pretty simple and straightforward.
"Lost Woods" by Olimar12345 - looks daunting, but the symmetry between both hands makes things easy.
"Tarrey Town" by Latios212 - not much going on, but still sounds nice!

Not too bad
"Korok Forest (Night)" by Pianoth Eakòs Shaveck - I played the day version, but the night version is just a key change over.
"Hyrule Castle (Inside)" by Olimar12345 - pretty subdued, so a relatively smooth ride until the last page.
"Mipha's Theme" by Latios212 - mostly just the clef changes preventing it from being really easy.
"Revali's Theme" by Latios212 - not too bad, aside from the accidentals in places and large chords in that one section.
"Rito Village (Night)" by Latios212 - fairly straightforward but I find it harder to play through closer to the end.
"Tarrey Town (Rito)" by Latios212 - there's a lot going on, but it's surprisingly manageable.
"The Champions' Ballad" by Latios212 - lots of (reasonable) jumps in the left hand, this is one of my favorites to play!

Hard
"Great Fairy Fountain" by Latios212 - polyrhythms on top of changing chords is tricky.
"Parasailing Minigame" by Pianoth Eakòs Shaveck - lots of jumping in the left hand, but a great sounding sheet.
"Riding (Day)" by Olimar12345 - large jumps and fast runs, but not impossible.
"Zora's Domain (Night)" by Zeila - not bad at all, except for the key signature. Really want to play this well sometime, as it's one of my favorites from the OST and suits the piano very well.

Nope
"Guardian Battle" by Olimar12345 - I tried that intro, kinda...
"Main Theme" by Pianoth Eakòs Shaveck - I won't be able to play those fast runs without a lot of practice...

Amazing update! Lol...Lost Woods though...I actually enjoy trying to learn that song. Reminds me of an old piano exercise I used to practice. :P

What a spectacular update. Having just beaten this game (well... 50+ hours and 16.8% beaten) I'll be checking some of these out.

Is anyone working on the boss battle theme or the Hateno Village tracks? Those were a couple of the standout pieces for me from this game.

The X-blight Ganon themes, idk if they're slightly different but they use the same basic theme as far as I could tell (I haven't listened to the soundtrack outside the game yet). I even heard parts of it in the Calamity Ganon stage one track unless I'm mistaken.

We added waterblight arranged by Pianoth and it is a fantastic arrangement. From what I can remember, they're all very similar with subtle instrumentation differences, so for piano they would be almost identical.

Yes, it's correct... I have to say, though, that the music related to Calamity Ganon and Dark Beast Ganon is significantly different. The first one uses pretty much the same theme, but with different rhythm. The second one instead is heavily based on the Main Theme.

I don't see the Dark Beast Ganon Ost arranged soon though. It sounds pretty tough to arrange.
